My second restaurant, but first this size(30 seats). This Place WAS falling apart, So before I could open the doors, we had to remodel the place. Everything was new, the floors, ceiling, walls, lights, bathroom. This became an amazing looking sushi bar and restaurant in Capitola, California. Looking back I would have opened the doors with a lighter remodel. I was happy because that place looked NICE!!
There was stone fountains throughout the dining room. In the mornings the sun would light up the whole restaurant and it was so nice. We decided to start serving american breakfasts. We made classic Eggs Benedict with REAL Hollandaise, Lyonnaise Potatoes that were THE best in town. Eventually the breakfasts became what we were known for.
I designed the kitchen and dining room layout. Those CIA classes came in handy. It was a great kitchen to work in. Lastly, I could not have done such a good job on this restaurant without my family and friends.
